Healthy Chocolate Chip Cookies

Ingredients

1 cup Oat Flour
1/2 cup WW Pastry Flour
1/2 cup Coconut Oil (melted and cooled)
1/4 cup Brown Sugar
1 Egg
1/2 tsp Cinnamon
1 tsp Vanilla Extract
1/2 tsp Baking Soda
pinch of salt
1/2 cups Bittersweet Chocolate Chips
1/2 cup Walnuts or Pecans (optional)

Directions

  1. Beat vanilla extract, large egg, and brown sugar in a bowl. Melt the coconut oil and add to mixture.
  2. Stir in Flours, Baking Soda, and Cinnamon
  3. Fold in Chocolate Chips and Pecans
  4. Chill for 30 minutes
  5. Preheat oven to 350
  6. Bake cookies 8 – 10 minutes (about a tbsp of dough per cookie)
